I know that I can move to the next tab with cntrl>tab. What I would like is if there was a shortcut to move to the previous tab as well. How about making cntrl>tab move to the previous, and option>tab move to the next?

Ctrl-shift-tab should do what you want!

Option-tab moves between mutliple windows. Shift-option-tab moves through them in the opposite direction.
Use shift-control-tab to move to previous tabs in a Workspace.
