I want to change all my Bible texts to "Red letter" I set the preference, and it changed a few of them, but I was mainly hoping for NIV, and NASB, if not is this something I could look for in future versions?

The red-letter style is translation-specific, and only a few translations actually have that information. Unfortunately, unless we get new editions of those texts from the publishers with support for red-letter, that's not likely to change. Accordance can't display information that isn't there.
