This is a pure newbie question:

Is there an easy way to search for different versions of the same word?

For example, I'd like to do one search that brings up all hits for baptize, baptism, baptized, baptizing...

Yes, using what are called wildcards. In your case, search for:

bapt*

searching for bapti* will find all the words you listed. The * is a wildcard symbol.

A similar note, but not solvable by wildcards (I don't think...)...

Any way to do a search that would include all forms of names referring to God? (i.e. God, Lord, Jesus, Holy Spirit, etc...) ? Not sure how that would be constructed, but it sometimes a construct I would like to use in conjunction with other terms.

For this you either need to construct a list yourself (in parentheses with commas) or go to a Topical Dictionary like Naves or Topical Textbook and pull the references or the names from these. At present Accordance does not have a thesaurus type search.
