How do I remove the ESVS info from Instant Details? Would removing this prevent me from viewing the related HALOT or BDAG entry?

In Preferences -> Instant Details, uncheck "Key Information" under Greek and Hebrew. If you change your mind, you can choose which keyed text shows up there in Preferences -> Compare Texts -> Interlinear Source Texts -> Keyed Text.
