I'm assuming there must be a shortcut key to toggle between typing in English and typing in Greek in Accordance because in my user notes I'm suddenly typing in Greek. I did (an admittedly cursory) search of the keyboard shortcuts and didn't see it there. Can someone fill me in? Thanks,

There is no shortcut, but the Text palette lets you switch the fonts.

Do read this topic on assigning custom keyboard shortcuts. It includes options for using System Prefs Keyboard shortcuts and cues for using Quicksilver to accomplish what you want.
Note that the two menu items you'll be wanting to assign to shortcuts are called "Helvetica" and "Helena".
