I'm sure there is something simple here, but how does one set Accordance to open with Bible text rather than a blank window. I have to quit Accordance with Bible text up in order for it to start up with text.

Whenever a Search window opens to search verses (more consistently in 8.1) it opens with an asterisk in the entry box and displays the entire text. This includes if you simply choose the text from the Resource palette. If it opens empty, set the search to Verses instead of Words and enter an asterisk.

In Preferences:Search window you can set how you want a new window to open when you do command-N or open it from the File menu, or launch the program when your preference is set to Default Search window.
