Is it possible to change the direction of the sentence diagram symbols? Specifically, when working in Greek diagrams to have the option of the "line" going vertically rather than horizontally, the "angle line" flipping its orientation to the other direction (and similarly for the "arrow", "angle arrow", "dashes" and "angle dashes")?
Or if not, to create and add these custom symbols to the left palette?

Absolutely. Just place your cursor at the edge of the line so that the cursor changes from an arrow to a crosshair. Then click and drag that end into the position you want.
By the way, it is also possible to get other symbols to appear in a right-to-left rather than a left-to-right orientation by holding the option key down when dragging the symbol from the palette into the diagram area.
