I am thinking about buying Accordance Essentials and an iPad.  I am used to Pages as a word processor, but I am wondering if there are any drawbacks to it.  For instance, can I copy and paste greek and hebrew into Pages?  Are there any pros or cons anyone has observed with Pages?

I think your best bet is the very fine Mellel word processor. It was made for scholarly use including languages that read right to left. . . . and it is pretty inexpensive. Here is the link to the website:

Does Mellel have an app for ios? I cannot find anything on it.

I am using Accordance on my ipad and the Pages app and I can copy and paste Greek and Hebrew into Pages.

There is no Mellel app for iOS, though it would be nice if there was one! (Are you listening Redlers?)

 

As Martin says, Pages works quite well in the little I have used it for.

Nisus (nisus.com) also works very well, and has some advantages over Mellel. Native file format is .rtf, which is word compatible; and I have found it to be intuitive and much easier to use than when I have tested Mellel.

Minor note: Accordance for iOS currently only supports copying verses at a time from Bible texts. 

 

I use Notability for writing and taking notes and I like it a lot. I just tested copying Hebrew and it did look pretty good (minor pointing issues). I also tried typing in Hebrew and it worked fine as well. But, when I started a line with Hebrew it kept the whole line RTL; there wasn't a way to enter a breaking space to move to LTR.
