When I click to add a new tab and then a language, my modules are given in what seems to be a random order. Anyway to organize them alphabetically?

I'd first make sure that your texts are alphabetized in the Library (screenshot #1).  You can also create custom Groups in the Library, and manually order the texts by dragging and dropping the icons (screenshot #2).  Whatever order exists in the Library will also exist when you open a Text Browser.

Lastly, if you were referring to the menu itself when opening a new tab (screenshot #3), then I've always found that my modules are automatically in alphabetical order.  But again, you may want to make sure they are alphabetized in your Library (screenshot #1).  Hope this helps.
